Swiss Cheese & Spinach Quiche

Serves 6

5 large eggs
¾ cup of milk
1 pie crust (refrigerated and from a 15-ounce package)
½ cup “frozen” chopped spinach (thawed & squeezed dry)
1 cup “shredded” Swiss
Fresh ground pepper (1/4 teaspoon) and salt (½ teaspoon)

Preheat oven to 375°F

Prepare an egg mixture in a bowl by simply placing the salt, pepper, and milk before giving it a good mix with a whisk. Now, spread the spinach in the pie pan and then pour the egg mix evenly over the top. Before placing the quiche in the oven, top it off with the cheese. Bake the dish for 15 minutes at 375°F; reduce the heat to 325°F and allow it to cook for another 20 minutes. The goal is to have the crust golden brown, but if it appears to be cooking too fast, cover the crust’s corners with foil. Once cooked, allow the quiche to cool on the counter for

5 minutes.

Diva Tip:

• This dish also works well with some thinly sliced mushrooms of your choice. Place the mushrooms atop the spinach before topping with the egg mixture and cheese.
