Spicy Garlic Chicken Sauté

Serves 4 to 6 

4 boneless & skinless chicken breasts (cut to 1½ inch pieces)
¼ teaspoon garlic powder
½ teaspoon dried parsley
½ teaspoon dried basil
½ teaspoon dried thyme
1 teaspoon red pepper chili flakes
½ teaspoon salt
¼ teaspoon fresh ground black pepper
¾ cup extra virgin olive oil (for dredging)
Generous Pinch of paprika

Sauce:

3 tablespoons extra-virgin olive oil
2 tablespoons butter or margarine
1 teaspoon red pepper chili flakes
3 teaspoons garlic powder
2 tablespoons fresh lime juice

In a small bowl, mix all these ingredients.

Wash the chicken and paper towel dry before cutting it to approximately 1½ inch pieces (set them aside). Get a clean plate (or dishwasher safe cutting board – not wooden) ready for temporarily placing the chicken. Prepare the spice mixture by stirring all the herbs together in a medium bowl. In another medium bowl, pour the olive oil. Now, dip the chicken in the oil and then dredge it through the spice mixture. Place the chicken on the clean plate or appropriate cutting board.

Over medium heat, pour 3 tablespoons of olive oil into a large heavy-based skillet or a flameproof casserole dish. Place the chicken in the skillet and sauté it until slightly brown (approximately 4 minutes per side). Stir the sauce into the skillet and cook for another 5 to 8 minutes or until the chicken becomes fully cooked. While cooking, continue to stir and rotate the chicken occasionally and be sure it becomes fully coated with the sauce.

This dish is delicious when served with steamed jasmine or brown rice.

Diva Tip:

• If you prefer a less spicy dish, reduce the amount of red pepper chili flakes to ½ teaspoon or less.
