Skinny Minnie Cheesecake

Serves 6 to 10

2 tablespoons honey
3 tablespoons cornstarch
1 tablespoon vanilla extract
4 cups “reduced-fat” ricotta cheese
3 “separated” eggs
¼ cup sugar substitute (or “preferred” 1 teaspoon of liquid Stevia)
⅓ cup “low-fat” graham cracker crumbs

Preheat oven to 350°F

Beat the cheeses in a large bowl until it is smooth. Now, add the sugar, honey, vanilla extract, cornstarch, and egg yolks. Fully stir the mixture. In a separate bowl, whip the egg whites for a few minutes in an effort to form peaks before mixing them with the ricotta cheese mixture.

Lightly cover a 9 inch spring-form pan with cooking spray. Evenly spread cracker crumbs on the bottom of the pan. Add the cheese mixture to the pan.

Bake for 30 to 45 minutes or until it becomes golden or is fully set.

Diva Tip:

• Personally, I prefer to use Stevia as a sugar substitute. For every cup of sugar, use 1 tablespoon of liquid Stevia.
