
24 Sep Simply Fabulous Cabbage Rolls
Serves 6 3 lbs. cabbage (1 medium head) | Preheat oven to 350°F Over medium heat, boil the cabbage in water until it is easy to pull the outer leaves from the head. Select 12 to 14 large leaves and set them aside. The remaining cabbage should be set aside, too. In a medium bowl, mix the meat, rice, onion, salt, parsley, oregano, ½ can tomato sauce and chili flakes. Slice the remaining cabbage and lay it on the bottom of a Dutch oven or other ovenproof ceramic baking dish. The goal is to have a bed of cabbage on the bottom. Remove the vein from the bottom of each leaf with a V-shaped cut. Now roll ¼ cup of meat into each leaf. Place each leaf (seam down) on the cabbage bed at the bottom of the baking dish. Place the tomatoes, sugar, and remaining tomato sauce in a mixing bowl. Use a spoon to mix well before pouring the mixture over the cabbage rolls. The rolls should bake “covered” for 1 hour to 1¼ hours or until they are tender. Diva Tips: • Adding a dash of garlic powder is a nice touch for garlic loving Epicureans. |
