Rosemary Lamb Chops With Honey & Balsamic

Serves 4 to 6

8 small lamb chops
2 tablespoons of honey
1/3 cup balsamic vinegar
1 clove of “peeled” garlic
¾ cup of vegetable of canola oil
2 tablespoons extra virgin olive oil
½ tablespoon of “chopped” fresh rosemary leaves
Fresh ground black pepper and salt to taste

The lamb chops should first be seasoned with pepper and salt to taste. Then, drizzle olive oil over them before sprinkling with rosemary.

There are several ways to cook this tasty dish. On the stove, place a grill pan over medium-high heat or preheat a gas or barbeque (charcoal) grill. In a blender or food processor, gently mix the garlic, honey, and vinegar. While mixing, slowly pour in the oil and mix with a goal of finding a somewhat thick sauce. Now, season the sauce with salt and pepper to taste.

The chops are ready to grill and, for medium-rare, the cooking time is approximately 2 to 3 minutes for each side. Once cooked, place the chops on a platter and drizzle over the top the sauce or serve the sauce on the side.
