1 jar (12 oz.) “drained” sun-dried tomatoes 1 “peeled” garlic clove ½ cup roasted almonds ½ cup “grated” Parmesan cheese 2 tablespoons extra-virgin olive oil 1 tablespoon red wine vinegar ¼ teaspoon salt (or to taste; Fleur de Sel preferred)
Use a blender or food processor to lightly “pulse” chop the garlic, almonds, and Parmesan. Now, add all the remaining ingredients and blend until smooth.
