
22 Jan Roasted Garlic With Olive Oil Drizzle
Serves 1 to 2 1 large garlic bulb | Preheat oven to 400°F Peel away the outer layers of the bulb and leave the skins of the individual cloves intact. Now, take a sharp knife and cut-off approximately ¼ of an inch off the top of the cloves. The goal is to expose the individual cloves. Lightly drizzle the olive oil over the bulb’s top and evenly distribute it between the cloves’ grooves; lightly sprinkle with salt. The bulb is ready to be placed in an, oven safe, clay pot or a “tented” piece of aluminum foil (leave a small opening at the foil’s top). The baking time is between 30 to 35 minutes or until the cloves feel soft when pressed. Remove the bulb from the oven and allow to cool for a few minutes. Using a pairing knife, it is best to cut the skin slightly around each clove. Each clove may be easily removed from its skin with a cocktail fork or fingers.
