Pulled Pork (Slow Cooker)

Serves 6 to 8

3 lb. boneless pork shoulder
2 cups (16 oz.) your favorite barbecue sauce
1½ cup chicken broth (low-sodium) or water
2 tablespoons Dijon mustard
2 tablespoons honey
1 tablespoon “light” brown sugar or agave
1 tablespoon soy sauce (low-sodium or gluten-free)
1 large “chopped” onion
Salt to taste
Fresh ground pepper to taste

Remove the excess fat and skin from the pork.

Make a bed of onions on the bottom of the slow cooker, and place the pork on top. Pour in the broth, cover, and cook on low for 8 hours. Remove the pork and allow it to cool to a temperature that is comfortable for using your hands to pull it into thin shreds. Remove any remaining excess fat and gristle. Also, skim any fat from the top of the liquid in the slow cooker.

Place the pork back in the slow cooker and stir in honey, mustard, barbecue sauce, and soy sauce. Finally, season with salt and pepper to taste.

Cover the cooker and cook for 1 hour on low.

This dish is best served on brioche buns (or hamburger buns) with tomatoes, pinto or black beans, sautéed vegetables, mashed potatoes, and/or coleslaw.

• A crisp green salad is a wonderful addition to this dish.
