11 Jun Polenta With Marinara Sauce & Basil
Serves 4 to 6 1 Polenta Roll (store-bought) | Cut the polenta into ½ inch slices. Over medium heat, pour the olive oil into a skillet, and cook the polenta for approximately 2 minutes per side (or until golden brown). Reduce the heat to low. Top each slice with a tablespoon of marinara and a teaspoon of cheese. Cover the skillet with a lid and cook for 1 to 2 minutes (or until the cheese melts). Use a slotted spatula to remove the polenta from the skillet. This dish is best served warm and topped with fresh basil as a garnish. Diva Tip: • Epic D’s simple polenta cakes are “off-the-charts” delicious and may be topped with a variety of cheeses such as Pecorino Romano, Mozzarella, Fontina, and Gouda. |
