Polenta With Marinara Sauce & Basil

Serves 4 to 6

1 Polenta Roll (store-bought)
4 tablespoons “freshly grated” Parmesan cheese
3 tablespoons extra-virgin olive oil
3 tablespoons “finely chopped” fresh basil
1 jar marinara sauce – garlic and basil
Freshly ground pepper and salt to taste

Cut the polenta into ½ inch slices.

Over medium heat, pour the olive oil into a skillet, and cook the polenta for approximately 2 minutes per side (or until golden brown).

Reduce the heat to low. Top each slice with a tablespoon of marinara and a teaspoon of cheese. Cover the skillet with a lid and cook for 1 to 2 minutes (or until the cheese melts).

Use a slotted spatula to remove the polenta from the skillet.

This dish is best served warm and topped with fresh basil as a garnish.
