Petite Caprese Salad

Serves 4 to 6

2 packages “rinsed” small tomatoes (yellow and red preferred)
2 packages “drained” mini fresh mozzarella balls
1 bunch fresh basil leaves (snipped or finely chopped)
⅓ cup extra-virgin olive oil or to taste
¼ cup balsamic vinegar or to taste
Coarse salt to taste (Fleur De Sel works nicely)
Freshly ground black pepper to taste

In a large bowl, toss all the ingredients. Place the bowl in the refrigerator until ready to serve.

Before serving, snip or sprinkle some extra fresh basil over the top of the arranged salad.

Diva Tips:

• My choice is to use slightly more olive oil than balsamic vinegar.
• On skewers, this dish is the perfect party appetizer. I load large toothpicks (decorative ones preferred) with the ingredients. They are colorful and sit beautifully on the serving dish and always enjoyed by the partygoers.
