Perfect Popovers

Serves 4 to 6 (12 popovers)

3 cage-free brown eggs (extra-large) – room temperature
1½ cup “sifted” all-purpose flour
1½ cup organic whole milk – room temperature
1½ tablespoons “melted” unsalted butter (grass-fed preferred)
¾ teaspoon Kosher salt or Fleur de Sel

Preheat oven to 425°F

Start by lightly greasing popover pans with butter or an oil of your choice.

In a medium bowl, whisk until smooth and thin the milk, flour, eggs, salt, and melted butter. Slightly heat the pans in the oven (1-2 minutes) before filing the cups (half-way) with the batter.

Without opening the oven door, allow the popovers to bake until golden brown (approx. 25 to 30 minutes).

These popovers are best served hot or warm.

Diva Tips:

• Do you love truffle flavor? If so, start by greasing your pans with truffle oil or butter and substitute my Truffle Salt when making the batter.
• Truffle oil or butter is also excellent for garnish for those wanting the ultimate Truffle-Popover experience.
