Naan Pizza With Gruyere, Prosciutto & Arugula

Serves 2 – Adjust to Serving needs (double, triple, etc.)

2 Naan Breads (store bought)
1 ½ garlic cloves minced
1 ½ cup of “bagged” Baby Arugula
1 Red Onion
3 tablespoons freshly grated Pecorino Romano or Parmesan cheese
8 slices Gruyere cheese (not too thick)
2 ripe Roma tomatoes
2 generous slices of Prosciutto
Extra Virgin Olive Oil for drizzle
Fresh ground pepper and salt (to taste)

Preheat oven to 350°F

Line a baking sheet with aluminum foil. Place Naan bread on the sheet and brush with olive oil. Spread red onion and garlic over each Naan. Place 4 thin slices of Gruyere over the top the Naan followed by tomato slices, salt, and pepper. Finally, add to the Naan prosciutto, 1 cup of baby arugula (or as much as you desire), and lightly sprinkle with Parmesan cheese.

Bake the Naan pizzas for about 8 to 10 minutes, watching closely until the bread is crispy and the cheese is melted. Lastly, turn the oven to broil (again watch closely) and broil for about 1 to 2 minutes until the cheese is bubbling and getting slightly browned.

Pull from the oven and sprinkle the remaining baby arugula on the pizzas before serving if desired.

Diva Tip:

• Adding the fresh baby arugula prior to serving gives this delicious pizza a nice fresh texture with peppery accents. I personally love this addition.
