Herb Salad With Peaches, Burrata & Toasted Pecans

Serves 4 to 6

2 Burrata Balls (each at 4 oz.)
2 fresh ripe peaches
Pecans or walnuts chopped (slightly toasted; 2.25 oz. package)
4 – 6 cups Herb Salad Greens (your choice)
Fresh ground pepper and salt to taste

The Honey Vinaigrette Salad Dressing:

½ cup extra-virgin olive oil
⅓ cup balsamic vinegar
2 tablespoons honey or agave syrup
2 tablespoons white wine (optional)
¼ teaspoon salt (or to taste)
¼ teaspoon fresh ground pepper (or to taste).

Preheat oven to 325°F

Spread aluminum foil on a baking sheet and place the pecans (or walnuts). Now, bake the nuts for 8 to 10 minutes or until golden brown.

The salad dressing is very quick and easy to prepare. Simply whisk all the ingredients together in a small to medium bowl.

Arrange the greens in a large bowl (family style) or on small plates. Slice the peaches and burrata into rustic pieces and arrange on top. Also, sprinkle on top the pecans (or walnuts) along with salt and pepper to taste.

Lightly drizzle with salad dressing and serve with a ramekin of extra dressing on the side.
