Herb Marinated Grilled Pork Chops

Serves 4

4 pork chops
¾ cup extra virgin olive oil
¼ cup balsamic vinegar
1 tablespoon Worcestershire sauce
1 teaspoon fresh rosemary
½ teaspoon fresh thyme
½ teaspoon fresh ground pepper
1 teaspoon fleur de sel salt or sea salt

Indoor or Outdoor Grilling: Medium-high heat is needed for either an indoor or outdoor grill. A grilling pan, a stainless steel pan or cast-iron pan also works nicely for searing the chops.

Season the Pork Chops: In a small to medium bowl, mix all the ingredients with a whisk. Now, brush both sides of the chops, leave them covered in the bowl or (preferred) transfer them and the ingredients to a 1 gallon zip lock bag before marinating in the refrigerator for at least 30 minutes or overnight.

Grilling: When the grill temperature is right, lightly brush the grill with olive oil before placing the chops for cooking. The chops will require approximately 5 to 8 minutes per side depending on the size or thickness of cut. If using a grill pan or other pans, add 2 tablespoons of olive oil and cook on medium-high heat. After the chops are cooked, allow them to sit for 5 minutes before serving.

The chops are great when accompanied with a fresh salad and my quinoa recipe.

Diva Tip:

• When marinating, always use a large zip lock bag and place it in a bowl before refrigerating. The longer the marinating time, the more flavor to the pork chops.
