Epic Bruschetta

Serves 4 to 6

1 French sourdough baguette (sliced to ½ inch “diagonal” pieces)
2 tablespoons extra virgin olive oil
2 tablespoons premium balsamic vinegar
⅓ cup fresh basil leaf (sliced thinly)
¼ cup “grated” Parmesan cheese
2½ cups “minced” Roma, Heirloom or Cherry tomatoes
2 teaspoons “minced” fresh garlic
½ teaspoon salt (Fleur De Sel or sea salt preferred)
1 teaspoon fresh ground pepper
1 garlic clove for rubbing

Preheat Oven Broiler

In a medium bowl, place the tomatoes before adding the garlic, parmesan, vinegar, olive oil, basil, salt, and pepper. Use a large spoon to stir and thoroughly mix the ingredients. Set the bowl aside and allow everything to marinate at room temperature (15 to 20 minutes).

Cover a baking sheet with aluminum foil. Place the sliced baguette on the baking sheet. Brush the bread slices with olive oil before rubbing them with a fresh garlic clove. Broil for 1 to 2 minutes, but watch carefully. Remove from the oven when the slices are golden brown. Now, spoon the mixture on each slice and serve.
