Elvie’s Family Pie Crust

Serves 1

2 cups flour
½ cup Spectrum Organic (or Crisco) All-Vegetable Shortening
½ cube butter
4 tablespoons “ice” water

Set the ice water aside.

In a medium bowl, place all the ingredients, and use a pastry cutter to mix. When it appears to look like oatmeal, add a tablespoon of water. Continue to mix and gradually add water until the dough reaches a consistency that will easily roll out.

Lightly sprinkle flour on a cutting board or another surface (e.g., foil or wax paper) before rolling the dough. Also, rub some flour on the rolling pin to keep it from sticking to the dough. Roll out the dough to the desired size and thickness. Lightly grease the pie dish. Place the dough in the pie dish and gently form it to the dish. Cut-off the outer excess dough and use fingers to pinch and shape the top edges of the dough.

Place the dish in the refrigerator for 15 minutes or until it is time to fill the pie dish.

Diva Tips:

  • This recipe is for one pie crust. For more crusts, multiply as needed.
  • Lard was traditionally used by Elvie. Epic D prefers to use Spectrum Organic All-Vegetable Shortening, for a flavorful, flaky, and healthier crust is produced.
