Crispy Baked Tilapia Fillets

Serves 6

4 Tilapia fillets
1 clove “crushed” garlic or 1 teaspoon garlic powder
1 teaspoon salt
2 tablespoons “chopped” parsley or 1½ teaspoons dried parsley
1 cup store-bought plain bread crumbs
¼ teaspoon dried thyme
¼ cup extra-virgin olive oil
¼ cup finely “chopped” almonds
¼ cup grated Parmesan cheese
Fresh ground pepper “to taste” (a pinch is all that is needed)
4 lemons for garnish
Garnish with a sprig of Italian parsley

Preheat oven to 375°F.

Fully mix in a medium bowl, cheese, garlic, thyme, salt, bread crumbs, almonds, pepper, and parsley. Get a shallow baking pan ready for the fish.

In a separate dish, pour the olive oil. Now, dip each fillet in the oil and then dredge it through the mixture. Place the fish in the baking pan and cook. Never turn the fish while it is cooking.

Baking time is 20 to 25 minutes.

Diva Tips:

• Progresso bread crumbs are preferred because whole grain crumbs tend not to add the crispiness that this fish deserves.
• Fresh lemon wedges are so flavorful when squeezed over these delicious fish fillets.
• This dish also pairs well with rice pilaf.
