Crisp Watermelon & Cucumber Salad

Serves 4

1 seedless watermelon (cut into cubes)
3 baby “seeded” English cucumbers (cut into cubes)
1 small red onion (halved; sliced to thin half-moons)
1 cup “crumbled” feta cheese
½ cup “ thinly sliced” mint leaves
2 tablespoons extra virgin olive oil
2 tablespoons lime juice or to taste

In a small bowl, place the lime juice and onions. Lightly stir and let it sit for 10 to 12 minutes to marinate. Now, stir in the olive oil.

In a large bowl, toss the cucumbers, watermelon, and cheese. Place in the refrigerator until ready to serve. Then, add the onion mixture, and toss. Finally, add the mint and lightly toss some more. The salad is ready to serve.

Diva Tips:

• This dish is best served cold or slightly chilled.
• Not a fan of feta cheese? Try substituting queso fresco for a milder taste.
