Caprese Panini

Serves 4

2 “thinly sliced” medium tomatoes
½ cup fresh basil leaves
4 oz. “sliced” fresh mozzarella cheese
8 “slices” whole wheat bread
Olive oil cooking spray (non-stick)

Diva’s Siracha Mixture:

½ cup “reduced fat” mayonnaise
2 tablespoons siracha sauce (or more to taste)
¼ teaspoon garlic powder
Salt to taste

Mix all ingredients in a small bowl and set aside.

Preheat a Large Skillet Over Medium Heat or (ideally) a Panini Grill

Lay out the bread slices. Spray all slices with olive oil. Now, turn 4 slices over and top with tomatoes, cheese, basil, and Diva’s spicy mixture to taste. Complete the sandwich by covering (coated sides up) with the remaining slices.

Cook the sandwiches for 3 to 4 minutes or until golden brown. Allow the cheese to melt, and (turn over once) if using a skillet.

These sandwiches are best served hot or immediately after cooking.

Diva Tip:

Try adding your favorite melting cheese to mix things up.
