Bananas-Foster French Toast

Serves 2 to 4

Diva’s French Toast Mixture:

4-6 slices bread (Texas toast preferred)
½ cup whole milk
2 large eggs
1 teaspoon vanilla
½ teaspoon cinnamon
¼ teaspoon allspice
Dash of salt
Butter

Diva’s Banana Topping:

2 bananas (“sliced”)
¼ cup “dark” brown sugar
4½ tablespoons “unsalted” butter
Dash of cinnamon

Preheat oven to 400°F

Spread aluminum foil on a baking sheet and set it aside.

Prepare Mixture: In a medium bowl, use a whisk to mix the eggs, allspice, cinnamon, and milk. Dredge the bread slices through until they are completely soaked with the mixture. In fact, leave the bread in the bowl so it sponges up as much fluid imaginable.

Over medium heat, melt butter on a griddle or in a skillet. Cook each bread slice in batches until lightly brown (approximately 2 to 3 minutes per side). Then, place the bread on the baking sheet and finish cooking in the oven for 12 to 14 minutes until golden brown or until brown to taste.

Prepare the Banana Topping: Melt butter in a skillet over medium heat. Stir in the brown sugar and allow it to blend with the butter. Pour in the banana slices and stir until they are covered with the wonderful sauce. When the bananas become warm throughout, stir in a dash of cinnamon.

The topping is now ready to be placed over the French Toast.
