Baked Halibut With Basil & Chili Emulsion

Serves 2

4 cloves garlic
3 tablespoons extra virgin olive oil
10-12 ounces of “cleaned” fresh Halibut
¼ teaspoon fresh ground pepper
¼ teaspoon salt
½ teaspoon paprika
¼ teaspoon crushed red pepper
½ teaspoon fresh basil
1 teaspoon fresh chopped Italian parsley
½ lemon

Preheat oven to 500°F

Combine the garlic and olive oil in a blender (blend well).The fish should marinate in the refrigerator for at least 30 minutes. Place the fish in a bowl and pour the blender’s mixture all over the fish.

In an oven-ready or flameproof casserole dish, center the fish. Sprinkle the fish with pepper, salt, paprika, and red pepper. Now, put some basil and parsley on top of the fish. Finally, squeeze the lemon juice over the fish; cut the lemon in half and leave it in the corners of the dish.

Baking time is 12 to 15 minutes.

 
 

Diva Tip:

• Given the high oven temperature, be careful. Halibut will dry-out fast. It may not appear cooked, but it is cooked in 12 to 15 minutes or less. Basically, the thicker the cut of fish, the longer the cooking time.
