Apricot & Brown Sugar Glazed Ham

Serves 8 to 10

1 precooked ham (12 to 14 lb.)
3 cups apricot nectar (e.g., Kern’s)
1 cup brown sugar
⅓ cup apricot jam
¼ cup Dijon mustard
½ lemon (“juiced”)
4 garlic cloves (“smashed”)
1 ginger piece (1 to 1¼ inch; “smashed”)

Preheat oven to 350°F

Over low heat, simmer the lemon juice, garlic, apricot nectar, and ginger in a medium saucepan (approximately 18 to 20 minutes). After simmering, strain out the garlic and ginger and pour the glaze on the bottom of the roasting pan.

In a small bowl, mix the brown sugar, jam, and mustard. Now, rub this mixture on the ham before placing it in the roasting pan. For additional flavor, place sliced fresh apricots around the ham on the roasting pan’s bottom.

Place the ham in the oven and cook for 1 to 1¾ hours. While cooking, base the ham every 15 to 20 minutes with the pan’s glaze.

Diva Tip:

• Peach nectar, fresh peaches or peach jam will act as a fine substitute for apricots.
