Ali’s Peach Bruschetta

Serves 8 to 12

1 French sourdough baguette (sliced to ½ inch “diagonal” pieces)
2 tablespoons “chopped” fresh cilantro
1 tablespoon fresh lime juice
1 tablespoon agave syrup or sugar
2 cups “chopped” peeled peaches (3 to 4 peaches)
¾ cup “finely chopped” red bell pepper (1 pepper)
¼ cup “chopped” green onions
6 oz. “thinly sliced” mozzarella
Pinch of ground red pepper or to taste

Preheat Oven Broiler

Cover a baking sheet with aluminum foil. Place the sliced baguette on the baking sheet and set them aside.

In a medium bowl, place the peaches, onions, cilantro, bell pepper, lime juice, agave syrup, and red pepper pinch. Use a large spoon to stir gently and thoroughly mix the ingredients. Set the bowl aside.

On each sliced baguette, top it with cheese. Broil for 1 to 2 minutes, but watch carefully. Remove from oven when the cheese melts, and the bread is golden brown. Now, spoon the mixture on each slice and serve.

Diva Tips:

• Freshly chopped cilantro on top is a fragrant and delicious garnish. Not a fan of cilantro? Simply substitute Italian parsley.
• Changing up the cheese is also fun. Burrata, Brie, Ricotta or your favorite melting cheese will work perfectly.
• This beautiful Bruschetta is perfect when served on a family-style platter (or dish), and is a simple appetizer to prepare at any time.
• This dish may be made in advance. Prepare and refrigerate the mixture for up to a day ahead. Allowing the mixture to marinate in the refrigerator enhances the flavor.
