While visiting Bordeaux last year, I had the pleasure of taking a tour that included a wine/cheese tasting at this unbelievable establishment. In my not so humble opinion, it is the best cheese you’ll ever have and we are fortunate enough to be able to buy a few of his blends in the United States from Cowgirl Creamery (www.cowgirlcreamery.com).

Upon entering this cheese shop, one is led down a chilly cave and long flight of stairs where there are three caves (different cheeses are housed in separate areas to maintain temperature and prevent mold contamination). This is where the tasting of the cheese, accompanied by various wines of the region, is enjoyed! My favorite cheese is referred to as “the butter of the God’s,” which consists of a raw milk butter with salt crystals that is not exported to the United States. The reason the cheese tastes so fabulous in France is the fact that it’s unpasteurized. I was fortunate to meet the man himself and I was in cheese heaven!
